Tortilla Crusted Tilapia


I'm always looking for quick and easy things to do with tilapia.
Wanna know why?

Here you go: 
-It's easy to defrost if you forget to thaw it, OR you don't have anything else to make dinner out of.
-It's a nice mild fish that most people like
-It's cheap
-It's good for you
-Though it's farmed, it eats plant matter, so it's some sustainable that some fish.
-It takes on so many different flavors easily

I found this recipe on Food.com and only changed it a bit.  It was very highly rated, with a 
4.5 stars with over 18 reviews.  That's pretty good!  
Plus, I love pretty much anything that has Mexican flavors, and this one has that covered.

One note, I bet you could use regular leftover tortilla chips (crumbs from the bottom of the bag???) if you don't have fresh, corn tortillas.  Make it your own...



Serves 4
Ingredients


4 tilapia fillets
6 corn tortillas, torn in pieces
1 jalapeno pepper, seeded and coarsely chopped
2 teaspoon lime juice
1/4 cup fresh cilantro
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1 teaspoon seasoning salt
1 egg, beaten


Preheat oven to 375°F.  Coat a baking sheet with cooking spray.
Place tortilla pieces, pepper, lime juice, cilantro and spices in food processor or blender. 



Pulse until the mixture is uniform small crumbs.  
You can go smaller if you like, I wanted some nice texture.



Spread on plate. In another shallow dish, beat the egg.



Dip each fillet in egg, then in crumbs, patting crumbs to adhere. Place on baking sheet.
Bake until fish flakes, about 15 minutes depending on thickness of fillets.

Serve with corn and bacon sauté.
