Corn & Bacon Saute


A very fast and simple side dish for a variety of entrees.
We were surprised at how much we loved this, of course, I love corn, and adding bacon and cilantro never hurt.

I use the fire roasted frozen corn from Trader Joes, but any fresh, or frozen corn would work for this. 

Also, I used the pre-cooked bacon and chopped it up, then heated it up.  It releases just enough bacon fat to help saute the rest of the ingredients.  Use whichever kind of bacon you have on hand.



Serves 2-4
Ingredients

2 cups corn, fresh or frozen
4 slices of bacon, chopped
1 jalapeno, minced
1/4 cup cilantro, chopped
3 green onions, sliced
1/2 tsp Chili powder
1/2 tsp Cumin
1/4 tsp Garlic Powder
Salt and pepper, to taste 

Cut up bacon into thin chunks, fry over medium high heat in a fry pan until mostly crisp.  Drain all but about 1-2 teaspoons, leaving the bacon.  Add jalapeno and corn, and heat through.  Add the chili powder, cumin, and garlic powder.  Add green onions and cilantro stirring to combine.  Taste and add salt and pepper as desired.  Serve as a side dish for grilled meat, or tortilla crusted tilapia.
