What's in the Fridge Frittata


One of the best things about having friends over, is great leftovers the next day.  I made entirely too much Greek food last night, but I was excited about the possibilities with them this morning.  I had done souvlaki meat skewers (chicken and pork) and also skewers of grilled veggies- mushrooms, zucchini, summer squash and orange & yellow bell peppers. I also had a bunch of feta left over... I know what to do FRITTATA!

A frittata is just an omelette that is not folded over, and the yummy stuff is more equally distributed throughout the eggs.  

Oh yeah, and it's way easier...  I mean really, who wants to stand there and make people 'custom' omelettes and be all careful to make it look just right??? Not me...
AND,
I may point out that if you do make everyone an omelette, that you, the cook, will likely be eating your omelette last as everyone else is just about done with their omelette.  You could do a big ole' sccrambley thing, but that's not always too pretty, now is it? Do yourself a favor and start making frittatas instead.

Have I anywhere above said a frittata is just a breakfast food? 
Nope, it is not just for breakfast.  It would also be great for dinner on a crazy busy day when your inspiration is low... just sayin'!

Feeds about 4-5
Ingredients
5 eggs
1-2 cups veggies, your choice (zucchini, peppers, spinach, tomatoes, green beans)
1/2 lb bacon, chopped, or other leftover meat*
1/2 onion, chopped
1/2 cup cheese (or more)
Salt & Pepper

*Other ideas to add in:
- Frozen, chopped up pre-cooked sausage patties
- Leftover kielbasa or other sausage
- Taco meat
- Cheese, great way to use up the little pieces and varieties in  your fridge.
- Leftover cooked pasta
- Leftover cooked potates
- Leftover cooked rice

Preheat oven to 350 degrees.

Assemble your items to add to your frittata (veggies, meat, cheese, noodles, etc) chopping as necessary and set aside. Beat eggs, set aside.

Fry up the bacon, if you are using, then drain off the fat when crisp.  Add a small amount of fat to the pan and saute your chopped onions until soft, add any other meats and veggies you are using and heat throughout.


Add the beaten eggs and stir them throughout the other ingredients. Stop stirring and lower heat to medium for another 2-3 minutes until the edges look a bit "set". 


Put the pan into the hot oven and let bake until the middle is set, probably about 8-10 minutes. Top with more cheese and serve.
